Sambousek with a cheese and olive filling
 
Pastry Ingredients:
700 g flour and another 100 g for the initial stage of the dough
1 egg
130 ml lukewarm water
30 g fresh yeast
1/2 tsp sugar
180 ml vegetable oil (such as canola)
1 tsp salt
Egg for brushing the sambousek
60 g sesame seed
 
Filling ingredients:
200 g Kalamata olives
100 g green olives
200 g mozzarella cheese
 
Preparing the dough:
In a deep bowl, mix the yeast with water, sprinkle it with a small amount of sugar and flour and wait fifteen minutes for it to rise.
In a large bowl, mix the flour (700 g) with sugar and add the yeast that has risen, the oil and egg.
Knead the dough until it becomes smooth and supple. Cover with a towel.
Allow the dough to rise for at least an hour.
After the dough has risen, kneed it again and wait another 30 minutes. Divide it into smaller balls.
 
Preparing the filling:
Pit the olives and cut them in half, cut the mozzarella cheese into small cubes, and put everything in a bowl.
 
Roll out the dough on a floured surface to about half a centimeter thick and cut 7cm-diameter circles.
Using a spoon, place a small amount of filling in the center of each circle, and pinch to close the sambousek. Brush with egg and sprinkle with sesame seeds.
Arrange the sambousek on baking paper on a baking pan, allowing room to rise during baking.
Bake for about half an hour in an oven preheated to 200 degrees until the sambousek are golden.
