One of the signs that autumn has arrived is the Quince. I always said that Quince was a close cousin of the pear and the apple. It's only drawback is that it is hard and takes a long time to soften it, however, it is a great fruit for cooking and baking.
Yotam Ottolenghi has a lovely recipe with quince stuffed with meat and pomegranate seeds, which I made a year ago. In this post I will share a recipe of lovely quince cake.
